Make Ahead Mashed Potatoes:

You Need

  1. Yukon Gold Potatoes

  2. 1 1/2 sticks of Butter

  3. 8 oz cream cheese

  4. half and half for desired consistency

  5. 1/2 tsp salt (add more as needed for taste)


Peeled and cut into halves or quarters 5 lb. of Yukon Gold Potatoes. Make them about the same size.


Slip them into boiling water and boil for 30 minutes, or until a knife slips all the way through.


Drain in an colander, then replace in the pot and place over low heat or in Double Boiler – Don’t Burn!


Mash for about 3 minutes.


Remove from heat and add 1 ½ sticks of softened butter and 8 oz. of cream cheese,


Continue to mash until smooth and creamy. Don’t use a mixer.


Add half and half to desired consistency.


Add ½ tsp salt, taste and add another ½ tsp if necessary.


May be placed in a casserole and refrigerated.


Reheat in a 350 degree oven for 30 to 40 minutes.
